I’m not going to claim I invented avocado and poached eggs on toast, but the person who did needs a huge pat on the back! This dish is my new favourite weekend breakfast. I’d seen pictures floating around instagram and thought I’d give it a try myself and oh my! How delicious this is. Here’s how I make mine, if you’re interested in trying it.
For me the key point is having everything ready at the same so your toast is still warm.
Step 1) Add some white vinegar to a pot of water and bring to a gentle simmer
Step 2) Pop your bread in the toaster (I prefer wholemeal)
Step 3) Crack an egg into a small dish or ramekin
Step 4) Stir the water to create a whirlpool and gently tip the egg in, it will take about 2 mins for a nice soft boiled centre
Step 5) Once your toast is ready, cut a ripe avocado in half, scoop it out and mash onto the toast – add salt and pepper to taste
Step 6) Your egg should be nearly ready, once done – scoop out and place on top of the mashed avocado
Step 7) Enjoy the most amazing breakfast and maybe post a picture to instagram
