Today I thought I’d share with you a healthy but tasty treat recipe – my sugar free apricot and cinnamon oat cookies. They are the perfect guilt free snack.
1.5 Cups of oats
0.75 cups of chopped dried apricots (I use the Noberasco ones and chop them up)
1 Teaspoon of ground cinnamon
2 Ripe bananas
1 Small pot of greek yoghurt
Pre-heat the oven to about 200 degree celsius. Next you’ll need two bowls, one for wet ingredients and one for dry. Pop all the dry ingredients in one bowl (oats, cinnamon and apricots). In the other bowl mash up the two bananas using a fork, then add the greek yogurt and stir together to get your wet mixture.
Add the wet ingredients into the dry ones and mix together to get your cookie dough.
Make 10 dough balls, then place them on a greased tray and flatten into cookie shapes. Pop in the oven for 15 minutes and you’re done.
Enjoy, but i’ll warm you these are quite delicious you won’t be able to just have one.
